Cannabis Tarte Tatin

Apples caramelized in butter and sugar, baked under a blanket of puff pastry, then inverted to reveal a burnished crown. Cannabis-infused butter in the caramel lends limonene's bright top notes to the deep toffee base.

Ingredients

  • 6 Granny Smith apples, peeled, cored, quartered
  • ½ cup sugar
  • 4 tbsp unsalted butter
  • 1 tbsp cannabis-infused butter
  • 1 tsp vanilla extract
  • Pinch of flaky sea salt
  • 1 sheet puff pastry, thawed
  • Crème fraîche, for serving

How to make it

  1. 1

    Preheat oven to 400°F (200°C).

  2. 2

Melt sugar in a 10-inch oven-safe skillet over medium heat until amber.

  3. 3

Stir in both butters, vanilla, and salt. Cook 1 minute.

  4. 4

Arrange apple quarters tightly in concentric circles on the caramel.

  5. 5

Cook on stovetop 8–10 minutes until apples soften slightly.

  6. 6

Drape puff pastry over apples, tucking edges down.

  7. 7

Bake 25–30 minutes until pastry is deeply golden.

  8. 8

Cool 5 minutes, then invert onto a serving plate. Serve with crème fraîche.

Cooking tips

  • Use firm apples — soft ones dissolve into mush.
  • The inversion is nerve-wracking. Commit and flip with confidence.
  • A scoop of vanilla ice cream is never wrong here.

Why this pairing works

Limonene — in your strain and on your plate

The brightest terpene on our list, limonene is the citrus engine behind sativa-leaning, mood-elevating strains. It pairs naturally with bright, acidic dishes and works beautifully as a daytime, social terpene.
