Chili-Spiced Cannabis Chocolate Truffles

Ingredients

  • 8 oz 70% dark chocolate, finely chopped
  • 3/4 cup heavy cream
  • 4 tbsp cannabis-infused butter (~5mg THC per tbsp)
  • 1/4 tsp cayenne pepper
  • 1/2 tsp ground cinnamon
  • 1/4 tsp flaky sea salt
  • 1 tsp vanilla extract
  • 1/2 cup unsweetened cocoa powder, for rolling
  • 1/4 tsp cinnamon, for rolling
  • Pinch cayenne, for rolling

How to make it

    Place chopped chocolate in a heatproof bowl.

    Heat cream until just steaming—do not boil. Pour over chocolate, rest 1 minute, then whisk smooth.

    While the ganache is warm but not hot, whisk in cannabis-infused butter, cayenne, cinnamon, salt, and vanilla.

    Cover and chill 4 hours until firm enough to scoop.

    Scoop teaspoon-sized portions; quickly roll into balls between cool palms.

    Whisk cocoa powder with cinnamon and a pinch of cayenne; roll truffles in the cocoa to coat.

    Store chilled. Yields ~16 truffles at ~5mg THC each.
