
Peppercorn Steak with Cannabis Compound Butter

Ingredients
- 2 ribeye or NY strip steaks (~1.25 inches thick)
- 3 tbsp whole black peppercorns, coarsely cracked
- 2 tbsp olive oil
- 4 tbsp cannabis-infused butter, softened (~5mg THC per tbsp)
- 1 small shallot, finely minced
- 1 tbsp fresh parsley, chopped
- 1 tsp fresh thyme leaves
- 1 tsp lemon zest
- Flaky sea salt
How to make it

Mix infused butter with shallot, parsley, thyme, and lemon zest. Roll into a log in parchment and refrigerate.

Pat steaks completely dry, season heavily with salt, then press cracked peppercorns onto both sides.
