Limoncello Cannabis Tiramisu

Ingredients

  • 3 large egg yolks
  • 1/2 cup granulated sugar
  • 1 cup mascarpone cheese, room temperature
  • 3/4 cup heavy cream
  • Zest of 2 lemons
  • 1/2 cup limoncello
  • 1/4 cup fresh lemon juice
  • 1/4 cup water
  • 3 tbsp cannabis-infused honey (~5mg THC per tbsp)
  • 24 ladyfinger biscuits
  • Powdered sugar and lemon zest, to garnish

How to make it

    Whisk yolks and sugar over a double boiler for 4 minutes until pale and ribbon-like; cool to lukewarm.

    Beat in mascarpone and lemon zest until smooth.

    Whip heavy cream to soft peaks; fold gently into the mascarpone mixture.

    Combine limoncello, lemon juice, and water in a shallow bowl. Whisk in cannabis-infused honey while still lukewarm (do not boil).

    Quickly dip each ladyfinger in the soaking liquid and arrange in an 8x8 dish; spread half the cream on top.

    Repeat for a second layer. Cover and chill 6+ hours, ideally overnight.

    Dust with powdered sugar and shower with lemon zest just before serving.

Cooking tips

  • Whisking infused honey into a warm (not boiling) syrup keeps the dose stable.
  • For 8 portions at ~5mg THC per slice, total infused honey provides ~45mg—adjust to taste.
