Ingredients

  • 1 lb boneless chicken thighs, sliced
  • 3 tbsp green curry paste
  • 1 can (14 oz) full-fat coconut milk
  • 1 cup bamboo shoots, drained
  • 1 cup Thai eggplant, quartered
  • 4 kaffir lime leaves
  • 1 tbsp fish sauce
  • 1 tsp palm sugar
  • 1 tsp cannabis-infused coconut oil
  • Thai basil leaves, red chili, jasmine rice

How to make it

    Heat a wok over medium. Fry green curry paste in a splash of coconut cream until fragrant.

    Add chicken, stir-fry 3 minutes.

    Pour in remaining coconut milk, bamboo, eggplant, and lime leaves.

    Simmer 15 minutes until chicken is cooked and vegetables are tender.

  • Crack the coconut cream from the top of the can — it fries better than the liquid.

  • Add pea eggplants for bitter pops if you can find them.
