
Cannabis Beef Bourguignon
A French country classic: beef braised low and slow in red wine with pearl onions, mushrooms, and bacon. An infused herb butter finishes each bowl with a warm, myrcene hum.
Ingredients
- 3 lbs beef chuck, cut into 1.5-inch cubes
- 6 oz thick-cut bacon, diced
- 3 tbsp olive oil
- 2 carrots, sliced
- 1 large onion, diced
- 4 cloves garlic, minced
- 1 (750 ml) bottle dry red wine (Burgundy or Pinot Noir)
- 2 cups beef stock
- 2 tbsp tomato paste
- 1 bouquet garni (thyme, parsley, bay leaf)
- 1 lb pearl onions, peeled
- 1 lb cremini mushrooms, halved
- 6 tbsp cannabis-infused butter, softened (~5mg THC per tbsp)
- 2 tbsp fresh parsley, chopped
- Salt and freshly ground pepper
How to make it

In a Dutch oven, render bacon until crisp; remove. Pat beef dry, season generously, and brown in batches in the bacon fat. Set aside.

Sauté carrots and onions in the same pot until softened. Add garlic and tomato paste; cook 1 minute.

Return beef and bacon. Pour in wine and stock; tuck the bouquet garni in. Cover and braise at 325°F (165°C) for 2.5–3 hours until fork-tender.

Meanwhile, brown pearl onions and mushrooms in a separate pan with a bit of olive oil. Add to the stew during the last 30 minutes.

When the stew is done, remove from heat. Discard bouquet garni.

Stir cannabis-infused butter and parsley into the stew off-heat until melted and glossy.

Taste and adjust seasoning. Serve over buttered noodles or mashed potatoes.
